Ghost kitchens - also known as shadow kitchens, dark kitchens and cloud kitchens – are a relatively new, but rapidly growing phenomenon. In such arrangements, restaurants produce (or hire production of) their menus from centralized kitchens, for home delivery. Benefits can include cheaper rent, lower operating costs, and enhanced flexibility to serve multiple menus or test new items.
Given COVID constraints and the surge in home-delivery, ghost kitchens have shaken up the restaurant industry… It has created opportunities but there are challenges and important legal considerations to this concept, such as legal implications and relationship management with existing franchisees.
Attend this session to identify and creatively manage the risks of ghost kitchen implementation. Hear how some franchisors have found opportunities through ghost kitchens and understand the legal issues and practical strategies franchisors need to know when either operating or contemplating ghost kitchens.
