This session will provide insight into the different models of "dark kitchens" currently being deployed by restaurant brands in North America. The session will begin with a high level summary of the different types of models in use, including cloud kitchens, host facilities, ghost kitchens, and brand platforms. In addition, the session will provide analysis on the intersection of franchise law and the various dark kitchen models, examining the legal and business challenges, as well as the advantages, from the perspective of both franchisors and franchisees.
